Vegetable Curry and Mango Rice

Ingredients

  • 1 onion
  • 2 cloves garlic
  • 1 inch ginger
  • 1 Aji Limon chili
  • 1 stick celery
  • 1 pepper
  • Red Cabbage
  • Cauliflower
  • Black Beans
  • 1 Mango
  • Coconut Milk
  • Tomato Puree
  • Turmeric
  • Cumin Seeds
  • Coriander
  • Red Cabbage

1 Fry some cumin seed until they start popping then add the onions, garlic, ginger, chili, celery along with some turmeric and chili powder.

3 Add the black beans, the peppers, some tomato puree and a little more vegetable stock and fry for 5 minutes.

4 Add the coconut milk, the rice and simmer for 5 minutes.

5 Fold in the mango and add some coriander.
