Pulled Jack Fruit Tacos

- 12 Crunchy Tacos
- 250g (drained weight) Jackfruit
- 1 diced onion
- 2 orange habaneros
- 1/2 Lime
- 1 tsp coconut oil
- 1 tsp Garlic paste
- 2 chopped tomatoes
1 Heat the coconut oil in a pan. Add the diced onions along with the diced chili and garlic paste. Fry for approx. 5 minutes until golden brown.
2 Add the tomtoates, the jackfruit and juice of 1/2 a lime. Simmer on a low / medium heat for 20 mins.
3 Season to taste with salt and pepper.
4 Add to tacos. Top with cheese and serve.
