Aji Limon chilis grow to about 6cm long and have a delicious lemony zing that works well with seafood, stir fries or Thai food to give that hint of citrus flavour. They’re great for making sauces and salsas, or if you’re feeling daring, for making Chili Vodka. They freeze well and dry well, grinding into a vibrant and bright yellow chilli powder.

Anaheim

Also known as the ‘New Mexican Chili’, this mild fruit has a deep green colour and boasts both sweet and tangy tastes. They are very smooth fruits, approximately 18 cm long and 4 cm wide. Due to their larger size, they’re ideal for stuffing or making jams and salsas.

Apache F1

Apache F1’s are small 3cm long stubby chilis. With a hot sweet and savoury taste, they’re a very versatile chili perfect for everyday use. They can be used fresh in salsa, stir fries and sauces and just about anything really. They can be frozen and used later or can be easily dried and ground into chili powder / flakes.

Bhut Jolokia White

The white variety of the Bhut Jolokia grows between 5 to 8 cm long, the skin is pimpled and rough it packs an intense and lasting heat alongside a great fruity aroma and taste. Apricot Habaneros are lovely grooved salmon orange chilis, 2 to 3 cm wide and 6 cm long. These chilis nearly heatless but have a wonderful melon and apricot flavour and aroma. Biquinho

Biquinho means little beak in Portuguese and these chilis can be said to resemble small bird beaks. These small teardrop  shaped chilis grow to around 3.5 cm wide and 2.5 cm long and are popular with pizzas, salsas and salads. They are very sweet and fruity once ripened to red.

The Calabrian chili pepper has a round, bulbous shape and is a similar size to a large cherry maturing into a bright glossy red chili. Calabrians are a medium to hot, fruity and tasty chili that are traditionally stuffed with chunks of tuna, meats or cheeses.

Carolina Reaper

The Carolina Reaper is the current world record holder for the world’s hottest chili. These rounded fruits measure around 5 cm in diameter and have a characteristic pointed tail. The crinkled skin matures from green to a bright scarlet red. Aside from the heat expect a gorgeous fruity flavour with all the   richness and smokiness that can be expected from a relative of a Habanero; this really is a gorgeously well-balanced flavour which make great hot sauces. Cayenne are long slender chilis that can grow anywhere from 10 to 20cm long. They are one of the best-known chilis in the world and are popular in a wide range of dishes. They are most commonly used dried and powered to be used in sauces etc.

Dorest Naga

Bred from the Asian chili, Naga Morich. The Dorset Naga is wedge shaped in appearance and grows up to 6cm long with wrinkly skin. It is another super hot chili that, as well as having extreme heat, also has a fruity flavour and scent. The Dorset Naga is great for very hot dishes, adding a fruitiness to the extreme heat and is also excellent for hot chutneys and sauces. Use gloves when handling these bad boys!

Fresno

Fresno produces a great general purpose chili similar in shape and size to the jalapeño. They have a good flavour and are suitable for use most dishes in particular pizzas and salads. The fruits are conical and about 6cm long by 3cm wide and mature from green to a vibrant red.

Friar’s Hat

Friars Hat chilis get their name as they are said to resemble a Friar’s or Bishop’s Hat. They are distinctive winged chilis that grow to about 6cm wide and long. Their crispness and flavour make them ideal for using in fresh salsa or salads.

Jamaican Yellow

Jamaican Yellows are bell shaped chilis that can grow up to 5cm in diameter with a crumpled skin. They are ideal for a wide variety of Caribbean dishes and very good for hot salsas, sauces and in particular jerk seasoning that is rubbed onto meat such as chicken or pork. Great for barbecue marinades as well. They have an aroma similar to that of a bell pepper, with a fruity citrusy flavour and lasting heat. Use gloves when handling these bad boys!

Numex Big Jim

The Numex Big Jim is the largest chili in the world growing up to 20 cm long and have a thick skin. Big Jim is mild with a spicy flavour and is great stuffing because of their size. They are also very good to use in salsa, salads and roasting.

Paper Lantern

Paper Lantern is an attractive pendant shaped chili growing between 5 to 7cm long and are finely wrinkled. Aside from their fiery heat, they offer a sweet fruity tang and are great for hot sauces, dishes, barbecue marinades spicy soups, stews and salsas.

Piquante Pepper

These small round chilis are about 3 to 4 cm in diameter and have a thick juicy flesh and a sweet and warm taste. They are best stuffed with cheese, sausage and other savoury foods, but excellent for sandwiches, pizzas and salads. They are also great for sauces and salsa.

Jalapeno

Jalapeno is one of the world’s most famous chilis and grow to between 5 and 10cm long. With a distinctive fruity flavour, they can be pickled or smoked giving a richer sweeter flavour and are known as chipotles. Fresh, they are used everywhere in particular with nachos, taco and of course pizzas. They can also be stuffed with cream cheese, seafood or meet as well as using them in salsas.

Orange Habanero

The Orange Habanero is a wonderful looking chili. Lantern shaped and only 3cm long, they pack a fruity citrus flavour. Great for hot dishes and good in salsas and can even be used in salads, but they are hot! They dry and freeze well and if powered give off a lovely apricot scent. Use gloves when handling these bad boys!

Trinidad Scorpion

Growing from 4cm to 8cm, the Trinidad Scorpion gets its name from the shape at the bottom of the chili. Due to the scorpion’s intense heat, caution must be taken when working with them. These chilis are most commonly used in salsas, hot sauces and very hot dishes. Only a minimal amount is needed to make a massively hot impact. Use gloves when handling these bad boys!

Cherry Bomb

A beautiful looking chili that is full of flavour but packs a gentle heat. They grow to about 4cm wide and are great for salsas, chopped up on salads and make excellent pickles. However, they are most delicious slightly roasted and stuffed with cheese. They also freeze well.

Chocolate Habanero

Similar in appearance to other habaneros chilis but chocolate brown in colour and growing up to 5 to 6cm long. Like many habaneros they are very hot but have a fruity sweetness combined with an earthiness and smokiness behind the extreme heat. They are an excellent chili for making hot sauces or if you like rich salsa with an earthier taste, using chocolate habaneros is a great choice. Use gloves when handling these bad boys!

Chocolate Trinidad Scorpion

Growing from 4cm to 8cm, the Chocolate Trinidad Scorpion has a smokier flavour to its non chocolatey cousin. Due to the scorpion’s intense heat, caution must be taken when working with them. These chilis are most commonly used in salsas, hot sauces and very hot dishes. Only a minimal amount is needed to make a massively hot impact. Use gloves when handling these bad boys!

Corno di Torro

Corno di Torro means Bulls horn in Italian. They are one of the biggest chilis in the world between 15 and 20 cm long and are virtually heatless. These sweet flavoured, colorful and crisp chilis are ideal for stuffing, roasting and grilling, excellent for BBQ’s, salads and stir fries. They truly are a great all rounder!

Facing Heaven

Facing Heavens get their name because of the way the chilis point upwards. They are thin skinned and grow to about 6cm long. Facing Heaven is a medium-hot, fragrant chili with a thin skin and strong lemony citrus notes. It’s become well known through their extensive use in Sichuan cuisine. They are often fried whole in oil to release their flavour. They are excellent for making chilli oil and dry well.

Fish Pepper

The Fish Pepper is a medium hot chili that has beautiful green and white  variegated leaves. The colour change in the pods are spectacular – going from creamy white with green stripes to orange with red stripes, some are all red. The pods are around 3 cm long and 1 cm wide. The Fish Pepper is used to in many fish and shellfish dishes.

Pimientos de Padron

Padrons are small conical chilis that will grow to about 10cm long and are slightly crinkled. They are traditionally picked when green and sweet before they have any real heat. They are mainly eaten after being fried in a little olive oil and  sprinkled with sea salt and are mostly use as part of Spanish tapas.

Pot Black

The dramatic looking Pot Black chilis with black tinted leaves grow to between 2 to 4cm long. They have a clean and intense flavour but pack a punch in any dish. They are ideal for adding to stir fries and curries, as well as eating fresh in sandwiches and salads. They also dry and freeze well.

Purple Jalapeno

A lovely attractive variant of the Jalapeño, it’s about the same size with slightly less heat but can be used in the same ways as the standard Jalapeño. Looks wonderful pickled with other Jalapeno colours.

Red Habanero

This bright-red Habanero plant produces large fruits up to 5cm long and 4cm wide. They have a fruity flavour similar to other habaneros and are delicious in just about any dish, especially salsas and hot sauces. Use gloves when handling these bad boys!

Santa Fe Grande

Santa Fe Grande are thick, 7cm long smooth chilis that have a slightly sweet taste with a melon tang. They are great to eat fresh in sandwiches, salads and salsas. They can be stuffed with cheese, grilled and fry well. These mild chilis are perfect for pizzas and can also be pickled.

Ring of Fire is very useful everyday chili that is very productive, producing long thin cayenne type pods that are 1cm wide by 6-7cm long. They mature from dark green to red. Ring of Fire chili pods are thin walled so it not only excellent fresh but dries really well making a great chili powder. They are also good frozen, just cut up whilst still frozen and use in cooking or on pizzas.

Poblana (Ancho)

This large chili is used extensively in Mexican-style cooking. The fruits are up to 15cm long and are traditionally stuffed with meat, rice or vegetables and then baked. If left to turn red, the fruits are traditionally dried to make ‘Anchos’, another very common ingredient in Mexican dishes.

Trinidad Perfume is a Habanero chili, 2 to 3 cm wide and 5 cm long but with little or no heat with all the great flavour of a Habanero. Its citrus and smoky taste makes an excellent seasoning for Caribbean style food and can be used fresh in salads cooked or allow to dry and use as flakes or powder. A useful and unusual pepper.
